Homemade Granola
Ingredients:
8 cups old fashioned oats
1/2 cup wheat germ
1/2 cup oat bran
1/2 cup coconut oil, melted
1 cup raw honey or pure maple syrup
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 teaspoon unrefined sea salt
1/2 cup chopped dates
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup chopped pecans
1/2 cup slivered almond
1/2 cup pumpkin seeds
1 cup unsweetened flaked coconut (optional)
Directions:
Preheat oven to 275 F. In a large bowl, mix oats, wheat germ and oat bran. In a medium bowl, blend oil and honey or maple syrup. Mix in vanilla extract, cinnamon and salt. Stir the oil mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish. Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix fruit, nuts, seeds and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.
*feel free to use any kind of non-sulfured dried fruit, raw nuts and seeds that you desire!
