Super Simple, Yet Amazingly Delicious Kale Salad
So, you may be thinking that the name of this recipe is way too long, but after you taste this salad you will agree that it’s the perfect name! This basic salad is such a hit at our house that it usually seems to disappear before it even reaches the table 🙂
Ingredients:
1 bunch kale, washed (I’m sure you can use any type but I’ve been loving the green curly variety in this recipe)
1 lemon, juiced
1 Tbsp Organic extra virgin olive oil (may need more if the bunch of kale is particularly large)
2 cloves garlic, crushed
Unrefined sea salt and freshly ground pepper to taste
Variety of vegetables (preferably organic) of your choosing…I tend to use red pepper, baby cucumbers and grape tomatoes when I want to keep it simple and add avocado, green onions and sometimes even some fresh dill when I want to fancy it up a bit…but you can use any of your favourites!
Directions:
First, grab the kale by the stem and strip the leaves from the stem with your hands. Then holding a big handful at a time, slice it into smaller strips and put in a large bowl. Add lemon juice, olive oil, garlic, salt and pepper to kale and massage the mixture into the kale with your hands until it’s completely covered, turns dark green and starts to wilt slightly. This step is very important, so don’t be afraid to get your hands dirty! The acid from the lemon juice as well as the oil, helps to break down the kale (like steaming would), making all the nutrients more accessible to your body. Add the rest of your vegetables and toss.
Enjoy right away or store in fridge for up to a few days.
