Raw kale Salad with Garlicky Tahini

This salad is a must try! Not only is it delicious, but it is oh so nutritious, full of protein, B-vitamins, antioxidants, calcium and many more essential nutrients. Massaging the dressing into the kale is a very important step in the recipe, so don’t be afraid to get your hands dirty! The acid from the lemon juice and vinegar help to break down the kale (like steaming would), making all the nutrients more accessible to your body.


1 large bunch organic black kale (AKA dinosaur or lacinato kale), washed
1 clove organic garlic, crushed
2 Tbsp tahini
Juice of 1 lemon
1 tsp organic nama shoyu (raw unpasteurized soy sauce) or Braggs Liquid Aminos
1-2 Tbsp nutritional yeast
1 tsp raw apple cider vinegar
Unrefined sea salt to taste


First, grab the kale by the stem and strip the leaves from the stem with your hands. Then holding a big handful at a time, slice it into smaller strips and put in large bowl. Whisk together remaining ingredients in small bowl. Add to kale and massage dressing into kale with your hands until kale is completely covered and starts to wilt slightly (like it was very lightly steamed). Enjoy right away or store in fridge for up to a few days.
