Balsamic-GlazedĀ  Wild Salmon

I just made this for dinner and the whole family enjoyed it so much that I just had to post it!

Ingredients:

1 1/2 lb wild salmon fillet (between 1 and 2 lbs would be fine)
1 tablespoon organic extra virgin olive oil
4 cloves garlic, minced
1 tablespoon white wine
2 tablespoons honey
1/3 cup balsamic vinegar
2 tablespoons Dijon mustard
unrefined sea salt and pepper to taste
2 tablespoons chopped fresh basil

Directions:

Preheat oven to 375 F. Add olive oil to a small saucepan over medium heat. Add garlic and stir until soft, about 2 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened. Arrange salmon fillet on lightly oiled baking dish. Pour glaze over fillet and sprinkle with basil. Bake in preheated oven for 20-25 minutes, or until flesh flakes easily with a fork. Spoon remaining glaze over salmon to serve.
