Curried Wheatberry Salad

This recipe contains Wheatberries, which are what whole wheat flour is made from. As with all whole grains, they are a great source of B vitamins.

Ingredients:

1 cup soft wheatberries
1 apple peeled, cored and chopped finely
1 red bell pepper diced
1 small field cucumber peeled and cubed into small pieces
1/3 cup of slivered almonds
1/3 cup of raisins
3 Tablespoons organic extra virgin olive oil
6 teaspoons raw apple cider vinegar
3 Tablespoons of raw honey (substitute raw blue agave syrup to make vegan)
1 Tablespoon of curry powder

Directions:

Soak wheatberries overnight in water. Rinse, add to large pot with 3 ups of water and bring to a boil. Boil vigorously for 2 minutes, then let simmer gently for 45-50 minutes or until chewy. Rinse with cold water and put aside. In a large bowl, mix together oil, vinegar, honey (or agave) and curry powder. Add cooled wheatberries to bowl. Add in apple, cucumber, nuts and raisins, combine and serve.
